One-pot dish in 20 minutes: Creamy Spinach Chicken Pasta

Pasta is the most popular dinner during the week. Why? It’s so simple to make and it guarantees to please any picky eater. (Unless you intentionally dislike it)

How would you feel if we take this popular dish, making it in 20 minutes AND all in one pot? Seriously? How is that even possible?

  • Yields: 4 Servings

Ingredients

1 lb spaghetti (or other pasta types)

1 onion, sliced thinly

2 chicken breasts / 400 gr / sliced thinly

4 garlic cloves, minced

3 fresh tomatoes, cut in wedges

4 1/2 cups water (or chicken stock)

1 tsp salt (if using water, if using chicken stock – adjust your salt to taste)

4 cups loosely packed spinach leaves / 900 gr fresh spinach

Directions

Combine all ingredients, except spinach and wedges of 1 tomato, into a big pot over medium-high heat. Cover with a lid and bring water to a boil, about 10 minutes.

Once boiled, continue cooking uncovered until most water evaporates and pasta cooks through, about 10 more minutes.

Keep cooking: At first it well seem like there is A LOT of water. Keep cooking: Don’t be nervous, the water will eventually evaporate. Just keep cooking! Keep cooking: Eventually it should evaporate at least half or most of the liquid.

Tip: While pasta is cooking, make sure to stir it occasionally with a wooden spoon so pasta doesn’t stick together.

2 minute before your dish is finished, add the remaining tomato wedges and spinach. Toss it lightly with a tong and cooking for the remaining 2 minutes until spinach lightly wilts.

Serve your pasta hot with optional Parmesan cheese on top.

6:00 pm. You get home after a long long day at work. You drop your bag on the floor to take a breather.
