15-Minute Dinner: Vietnamese Pho Noodle Salad

We have created this fresh Vietnamese Pho Noodle Salad made for busy people, who need a quick dinner in under 15 minutes.

It’s healthy, so refreshing and perfect for a busy weeknight dinner, a great lunch idea or a crowd pleaser, when you are entertaining family and friends.

Ingredients

Toppings

1/2 lb Rice sticks (dry Pho noodles)

1/2 lb broccoli (or bean sprouts)

1/2 a rotisserie chicken, shredded

1/2 cup fresh cilantro, chopped (or fresh basil, chopped)

1/2 cup chunky roasted peanuts (optional)

1/4 cup crispy fried onion bits (optional)

Dressing

2 1/2 cups chicken broth (here we used 30% reduced sodium chicken broth)

3 tbsp soy sauce (we used low sodium soy sauce)

1 tsp sugar

1 tsp lemon juice (or rice vinegar, or regular white vinegar)

Sriracha hot sauce

Directions

Bring a pot of water to a boil, and carefully add the broccoli, cook for 4 minutes. Remove to a colander. Do not get rid of boiling water. If you use bean sprouts: add bean sprouts in the boiling water, cook for 1-2 minutes. Using a tong, remove bean sprouts to a colander.

In the same pot with boiling water, add your dry pho. Cook as per package direction or 4-6 minutes.

While the noodles are cooking, you can make the dressing.

To make dressing:

In a large bowl add chicken broth, soy sauce, sugar, lemon juice. Stir until sugar dissolves. Microwave the dressing for 2 minutes. Set the dressing aside.

To assemble:

On individual plates, add some pho noodles, broccoli, shredded chicken. Top with fresh cilantro, chunky peanuts and fried onion bits for crispiness. Pour 1/4 cup of dressing to each plate or to your own taste preference.

Note: This fresh Vietnamese Pho Noodle Salad might taste a bit plain due to the amount of chicken broth, it’s highly recommended to serve with some Sriracha hot sauce or garlic hot sauce.
