15-Minute Dinner: Fried Chow Mein Noodles with Chicken and Vegetables

Today we are happy to share with you an awesome, super delicious, easy to make, easy to get ingredients and a HUGE crowd pleaser …. 15-minute fried noodles with vegetables and chicken. You can make this dish at home during busy weeknights, because it only takes 15 minutes.

Delicious, chewy noodles, with healthy vegetables and BIG flavor… Stick with me and read further.

Ingredients

1/4 light soy sauce (or regular soy sauce)

3 cloves garlic, minced

1 tbsp brown sugar (or white sugar)

2 tsp freshly grated ginger

1/4 tsp pepper

1 pkg (14 oz/ 400 g) Chow Mein noodles (or Ramen noodles, or instant noodles, or even spaghetti noodles)

2 tbsp vegetable oil

2 chicken breasts / 400 gr boneless chicken thighs / thinly sliced

1 onion, cut in thin wedges

2 cups frozen vegetables, thawed (a mix of carrots, cauliflowers, broccoli…. Or another mix)

Directions

In a medium bowl combine soy sauce, minced garlic, brown sugar, grated ginger, and pepper. Stir well and set aside.

If you bought dry chow mein noodles, cook them in boiling water as per package instruction, for 2 minutes. Drain well and set aside.

To save time, while you are boiling water for noodles, heat a large pan on medium high heat.

Add chicken into the cold pan to get it slowly heat up, while avoiding hot oil splashes. Cook chicken until golden brown, 5-6 minutes.

Add onion wedges, cook for 1 minute.

Add your frozen vegetables and cook until it’s slightly softens, 2-3 minutes.

Add your noodles. Gently separate it with a wooden spoon, 1 minute.

Finally, add the sauce you made earlier into the pan. Mix everything gently until well combined and the sauce heats through, 2 more minutes.

Note: If mixing noodles gets a bit tricky, use 2 spatulas to make it easier.

Serve hot.
