10-minute healthy on-the-go lunch: Easy Sushi Burrito

This sushi recipe is made for busy women always on the go. You can take these delicious sushi burrito to work, bring to the park with kids, or pack it in your kid’s lunch box.

Ingredients

1 egg, lightly beaten

1 cup cooked rice

1 tsp rice vinegar (or regular vinegar)

1 tsp salt

1 sushi nori sheet (roasted seaweed sheet)

1 tsp mayo

1/4 carrot, thinly sliced in length

1/4 ripped avocado, thinly sliced in length

Note: you can easily find a seaweed sheet in any Oriental grocery store or in Asian section of your local grocery.

Directions

Heat your pan on medium high heat, add oil and egg. Let it cook for 3-4 minutes or until the surface is golden and dry. Flip to another side, turn off your heat, and let it cook for 2 more minutes. Serve your egg on a plate and slice it lengthwise.

To a cup of rice add rice vinegar and salt. Mix and leave your rice cool for 2-3 minutes.

Get a bamboo mat: Place a bamboo mat on the cutting board. Getting a seaweed sheet: Place a seaweed sheet on top of the bamboo mat.

Tip: For no mess and no cleaning required after, cover your bamboo mat with a clear saran wrap. You can get the bamboo mat in any Asian supermarket for $1-$2. Or order on Amazon for less than $10.

Spread your rice evenly on the seaweed sheet in thin layer. Spread some mayo on rice for creamy flavour. In rows add your avocado, carrots, and egg on rice.

Start rolling: Lift your bamboo mat slightly and press it down with two hands to create a nice tight roll. Keep rolling: Repeat the same step by lifting the mat and continue pressing down the roll. Keep rolling: Repeat the same step one more time…. Am I almost done? Keep rolling: Repeat the same step until you reach the end of seaweed sheet. Phew… finally!

Tip: To close the sushi roll tightly and so it doesn’t fall apart, wet your finger with some water and damp it lightly on the edge of the sheet.

Wrap your sushi roll in parchment paper/ wax paper/ or aluminum foil.

What can we say about sushi? Well, it’s Japanese food. Ok, what else? It’s quite delicious and everyone loves it. You can have a nice sushi meal in any sushi restaurant, sushi bars, food court, and even ready-made in supermarkets. However it might get quite expensive to take the whole family for a sushi dinner. For a family of 4, a decent sushi dinner might cost between $60-$100.
